[ old-fashioned blueberry pancakes ]

MY FAVOURITE thing about weekends is waking up on Sunday morning and making something special for breakfast. And what better treat than homemade blueberry pancakes?


Lisa's old-fashioned blueberry pankcakes
This batter is so simple to make and sure beats store-bought pancake mix!

what you need:

1 1/2 cups flour
3 tsp baking powder
1/2 tsp salt
1 tbsp white sugar
1 1/2 cups milk
1 egg
3 tbsp butter, melted in a mug in the microwave
splash of vanilla
sprinkle of cinnamon
1/2 cup blueberries (or more if you like lots!)


how to:

In a large bowl, wisk together flour, baking powder, salt, sugar and cinnamon. Make a well in the center and pour in the milk, egg, melted butter and vanilla. Wisk until smooth. Stir in blueberries. Let sit for about 10 minutes.


Heat a griddle or frying pan over medium-high heat and melt a dab of butter into it. Pour or scoop the batter into the pan using approximately 1/4 cup for each pancake. Flip over when small bubbles appear around the edges and bottom is brown. Repeat with remaining batter (keep cooked pancakes warm in a covered bowl as you continue to cook). To serve, stack on a plate, add a dab of butter and top with maple syrup. Yum! Happy weekend!

I don't like the flavor of maple but I enjoy pancakes with just a smidge of butter, yum. My husband however, different story. I think I've got blueberries in the fridge :)

I LOOOOVE pancakes and these are the best looking I've seen in a long time!! Unfortunately, I'm an out-of-the-box pancake maker, but this could convert me! they look amazingly delicious!!
