[ pucker up ]

LEMON desserts are high on my list of favourites and this lemon square recipe is not only easy, it doesn't require a lengthy list of ingredients. If you don't have fresh lemons, you can use bottled lemon juice {although I think adding in the zest of a lemon into the crust makes them extra delicious!}


lisa's pucker-up lemon squares

what you need

crust
2 cups all-purpose flour
1 cup butter, cold, cubed
1/2 cup sugar
zest of one lemon (optional)

filling
4 eggs
4 tbsp all-purpose flour
1 1/2 cups sugar
1 tsp baking powder
2 large lemons, juiced (1/2 cup of juice)

how to

Preheat oven to 350F (175C).
In a medium bowl, combine flour and 1/2 cup sugar. Grate in lemon zest. 


Cut in cubed butter with a pastry blender.


Press into an ungreased 9x13 pan. Bake for 15-20 minutes until golden.


Whisk together all filling ingredients. 


Once crust is baked, pour filling over the baked crust and bake for an additional 20 minutes. Remove from oven and let cool (squares will firm up as they cool). 

When cool, dust with icing sugar, cut into squares and serve (or refrigerate to serve them chilled). Yum!

back again to say that I made these last night (but added coconut to the base) and they were delicious warm with a bit of cream...a big hit!
